Ingredients:

1 liter full cream milk

2 tbsp lemon juice or vinegar

1 cup sugar
-
4 cups water
-
3–4 cardamom pods (crushed)

Few drops of rose water or kewra essence (optional)
Method:
Step 1: Make Chhena (Fresh Paneer)
Boil milk in a heavy-bottomed pan.
Once it starts boiling, reduce flame and add lemon juice slowly while stirring.
When the milk curdles and separates, turn off the flame.
Strain through a muslin cloth and rinse with cold water to remove sourness.
Hang the cloth for 30–40 minutes to drain all excess water.
Step 2: Knead the Chhena

Take the drained chhena on a clean surface and knead it with your palm for 7–10 minutes until smooth and soft.

Make smooth, crack-free balls of equal size
Step 3: Prepare Sugar Syrup
In a wide pan, add water, sugar, and cardamom. Bring to a boil.
Drop the balls gently into the boiling syrup. Cover and cook on high flame for 15 minutes.
The rasgullas will puff and double in size.
Remove from heat, add rose water or kewra, and let it cool.
